Administration
§Assists in the implementation of the hotel’s Food & Beverage Strategy (goals, tactics and actions) to achieve and exceed forecasted revenue figures in Food & Beverage, and other revenue generating departments where relevant.
§Ensures beverage operations activities are aligned with the Food & Beverage Strategy, and the Hotel Actions have been implemented where appropriate.
§Assists in the preparation and update of the Departmental Operations Manuals.
§Attends regular departmental and cross-departmental meetings and ensure departmental briefings and meetings are effective and conducted as necessary.
Financial
§Generates and Manages Cost Reports: Oversee the cost of inventory and supplies and submit reports on a periodic basis. They review cost increases, communicate with vendors to review charges, and apply strategies to lower costs when possible.
§Maintains complete records of all beverage purchase agreements, contracts and quotes for the hotel.
§Sets, monitors and controls budget for the beverage unit/bar.
§Plans and implements cost control measures.
§Plans and implements systems to maximize sales and revenue.
§Assists in monthly reforecasting.
§Assists in managing costs based on key performance indicators.
§Ensures that all hotel, company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to, including the timely and accurate reporting of financial information.
Marketing
nAssists in the preparation, utilization and update of Marketing plans, as necessary.
nSupports in assessing Food & Beverage advertising needs and opportunities for the hotel.
nRecommends and develop proposals and implement Food & Beverage sales promotions with external partners to support advertising and sales campaigns.
nClosely works with the PR and Marketing Manager to maximize use of the targeted market information including customer profile, behaviour, and yield for the planning and evaluation of marketing communications.
Customer Service
nPrepares drinks in accordance with the guest’s order.
nWorks with the team to create the company experience for guests.
nCreates an environment for guests designed to stimulate all senses through personal services, amenities and experiences.
nFollows up with guests with additional services that enhance the guests’ experience.
nHandles guest requests personally and/or refer as appropriate.
nDemonstrates hotel values when providing service and teamwork.
nHandles all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to ensure problems are resolved satisfactorily.
Operations
nCreate Beverage Program:
oDevelop beverage programs, which includes what types of drinks to offer, which brands of liquor to use, pricing, and other menu aspects.
oThis includes creating wine lists, beer selections, and cocktail items.
nOrder Beverages and Maintain Inventory:
oOrder adequate supplies of liquor and non-alcoholic drinks and maintain a sufficient inventory. This duty involves forecasting and keeping track of which drinks are most in demand.
oBeverage managers must ensure a supply of non-drink bar items, such as snacks, napkins, mixers, and drink garnishes.
nManage Staff Training:
oTrain all bartenders, baristas and all associates associated with mixing and serving drinks. Demonstrate all beverage recipes and mixing procedures thoroughly.
oEnsure that associates maintain knowledge of beverages and wines.
