Job Summary
Responsible for the controlling, receiving of F&B items and store inventories through timely feedback and reporting on food cost to maximize profitability. 
Key Responsibilities
•  Calculates F&B costs.
•  Compares invoices, requisitions, sales & prepares reports showing cost vs sales.
•  Verify Receiving Report and code correction
•  Daily transfer of Sales from Point-of-Sale System to Inventory System
•  Spot checks on purchasing, receiving, storing, issuing functions and bar inventories.
•  Sales key creation and Inventory System code creation including recipe creation.
•  Conducts monthly food & butcher tests to determine yields.
•  Alcohol test to determine their strength or compliance with standards.
•  Compares menus vs food cost vs sales price.
•  Controls portion and minimize wastage and pilferage.
•  Conducts market surveys.
•  Checks quality of goods received
•  Ensures security in storage of goods.
•  Checks invoices against goods ordered and received.
•  Checks unit costs.
•  Prepares recipe costs with Executive Chef and Director of F&B.
•  Monitors FOC and rebates from suppliers
•  Entertainment and Duty Meal checks verification 
•  Posting of Daily Inter Outlet Beverage Transfers
•  Produces monthly F&B costs by outlet.
•  Checks store requisitions and receipts against stock records.
•  Conducts monthly spot checks of F&B Outlets 
•  Participates in half yearly stock take – linen and Operating equipment
•  Menu engineering.
•  Inventory Turnover Report
•  Beverage Potential Report
•  Spot check and verify housekeeping inventories on half yearly basis
•  Month End Closing Inventories (Stores and F&B Outlets) and prepare the Bar Variance Report
•  Posting of Month End JV's
•  Conducts periodic purchase price comparisons of food & beverage items and operating supplies with other hotels.
•  Checks Daily Receiving Records as prepared.
•  Verifies goods and services received are in line with quantities, quality and prices ordered.
•  Assists F&B decision making by providing the Management with analysis
•  Preparation of P&L for major events, Brunch and Race.
Skills, Experience & Educational Requirements
•  Bachelor’s or master’s degree in commerce or accounting.
•  2 years in similar position in a five-star hotel
•  Computer competency requiring word-processing, spreadsheet and database software knowledge and experience.
•  Have relevant experiences in the Store and Receiving section in hospitality field in UAE
•  Good knowledge of Accounting and Financial Systems 
•  Highly organized and proactive and be able to meet deadlines in a fast-paced environment
