Job Description

Role Overview


As a Chef de Partie at Banyan Tree Dubai, you are responsible for managing a specific section of the kitchen, ensuring the highest standards of food preparation, presentation, and consistency. You will play a key role in delivering exceptional culinary experiences that reflect the luxury and precision of the Banyan Tree brand.


You will supervise junior kitchen staff within your section and ensure smooth day-to-day operations during service.


Key Responsibilities


Section Management


  • Manage and oversee a designated kitchen section (e.g. hot kitchen, cold kitchen, pastry, grill, etc.).
  • Ensure mise-en-place is completed efficiently and to required standards.
  • Prepare, cook, and present dishes according to menu specifications and recipes.
  • Maintain consistency in quality, taste, and presentation across all dishes.

Kitchen Operations


  • Ensure smooth operation of your section during service periods.
  • Coordinate closely with Sous Chef and other sections to ensure timely service.
  • Monitor stock levels within your section and request supplies as needed.
  • Ensure proper storage and rotation of food products (FIFO system).

Team Supervision & Support


  • Supervise and guide Commis Chefs and junior kitchen staff.
  • Provide on-the-job training and support to develop team skills.
  • Ensure adherence to kitchen SOPs and hygiene standards.
  • Support a positive and disciplined kitchen environment.

Food Quality & Standards


  • Ensure all dishes meet Banyan Tree luxury quality standards.
  • Follow recipes, portion control, and presentation guidelines accurately.
  • Support menu development and seasonal changes when required.
  • Maintain strong awareness of allergens and dietary requirements.

Health, Safety & Hygiene


  • Follow HACCP, food safety, and hygiene regulations at all times.
  • Maintain cleanliness and organisation of workstations.
  • Ensure proper use and care of kitchen equipment.
  • Report any safety hazards or maintenance issues immediately.

Cost Control & Efficiency


  • Minimise waste and ensure efficient use of ingredients.
  • Support stock control and inventory processes.
  • Maintain awareness of food costs and portion control.

Qualifications

Qualifications & Experience


  • Previous experience as Chef de Partie in a luxury hotel or high-end restaurant.
  • Strong knowledge of culinary techniques and kitchen operations.
  • Experience in a specific kitchen section is an advantage.
  • Good understanding of food hygiene and HACCP standards.
  • Culinary qualification preferred.
