Job Description

As a Chef de Partie at DELANO Dubai, you will be responsible for managing a specific section of the kitchen, ensuring consistent preparation and delivery of high-quality dishes that reflect the brand’s refined yet relaxed dining experience. You will support the kitchen team in maintaining excellence, efficiency, and consistency across all service periods.


  • Section Ownership: Take full responsibility for a designated kitchen section, ensuring smooth daily operations and consistent output
  • Food Quality & Consistency: Prepare and present dishes to the highest standards, maintaining precision in taste, presentation, and portioning
  • Mise-en-Place Excellence: Ensure your section is fully prepared and organised prior to service for efficient and smooth execution
  • Service Execution: Deliver timely and accurate dish preparation during service, maintaining composure under pressure
  • Hygiene & Food Safety: Adhere strictly to HACCP, hygiene, and safety standards, ensuring a clean and compliant workstation at all times
  • Stock & Waste Control: Monitor ingredients, minimise waste, and ensure efficient use of products within your section
  • Team Collaboration: Work closely with Sous Chefs and other kitchen colleagues to ensure seamless kitchen coordination
  • Training & Support: Guide and support Commis Chefs within your section, promoting learning and consistency
  • Operational Standards: Maintain DELANO culinary standards in line with recipes, plating guides, and brand expectations
  • Continuous Improvement: Contribute ideas to improve processes, efficiency, and overall kitchen performance

Qualifications

  • Luxury Experience: Proven experience as a Chef de Partie in a luxury hotel, high-end restaurant, or premium lifestyle dining environment
  • Technical Culinary Skills: Strong foundation in culinary techniques with excellent attention to detail and consistency
  • Section Management: Ability to independently manage a kitchen section in a high-volume, fast-paced environment
  • Hygiene & Compliance: Solid understanding of HACCP, food safety, and kitchen hygiene standards
  • Team Player: Strong communication skills and ability to work collaboratively within a diverse kitchen team
  • Adaptability: Calm and efficient under pressure, with the ability to maintain standards during busy service periods
  • Educational Background: A formal culinary qualification or international culinary training is preferred, with strong technical foundations.
